2 1/2 lb Sw Potatoes peeled and cut in 1" cubes
3/4 cup packed Splenda brown sugar
1/4 cup butter softened
1 1/2 tsp salt
1/2 tsp vanilla
3 oz reduced fat cream cheese softened
1/2 cup chopped pecans, divided
2 cups mini marshmallows
Preheat oven to 375
Place potatoes in lg pot. Cover with water. Bring to boil. Reduce to simmer for 15 min or until very tender. Drain and cool slightly.
Place potatoes, sugar, butter, salt, vanilla, and cream cheese in a lg bowl. Mash or use a mixer to whip until smooth. Fold in 1/4 cup pecans. Spread mixture in an 11 x 7" pan sprayed with cooking spray. Sprinkle remaining nuts. Top with marshmallows.
Bake at 375 for 25 min or until golden brown.
